Using the same curing and smoking process as cold smoked salmon, the temperature is then increased to cook the salmon flesh. The cooking process intensifies the salmon’s rich delicious flavour and firm texture so it’s like enjoying fresh baked salmon but with a smokey flavour. The salmon is coated in cracked peppercorns during the curing process for those who enjoy an additional flavour hit for their hot smoked salmon.
Hot smoked portions are then vacuum sealed for freshness and convenience.
