Hot Smoked Salmon with Brown Rice
- Step 1
Bring a medium saucepan of water to the boil.
- Step 2
Put kale into a large bowl and add the olive oil. Rub the oil into the leaves then add the teriyaki sauce, lemon juice, celery, and sesame seeds. Add brown rice to bowl and toss to combine.
- Step 3
Blanch the broccolini in the boiling water; drain
- Step 4
Divide warm rice salad amongst 4 bowls, top with the broccolini, flaked pieces of salmon and a scatter of red chilli. Serve with lemon wedges.
300g Tassal hot smoked salmon, flaked
50g chopped kale
3 tablespoons extra virgin olive oil
3 tablespoons Teriyaki sauce
3 tablespoons lemon juice
1 stick celery, sliced finely
¼ cup sesame seeds, toasted
2 cups cooked brown rice
2 bunches broccolini, trimmed
1 red chilli, de-seeded and sliced finely
Lemon wedges, to serve
