Seared Salmon with Creamy Mash and Beans

METHOD

Step 1

Cut potatoes into even sized pieces and add to a saucepan of water. Bring to the boil and cook for approximately 15 minutes, or until tender. Drain well, return to the saucepan and mash. Add butter and milk, mixing until smooth. Fold in chives and season to taste.

Step 2

Meanwhile, brush each side of salmon with the olive oil. Add skin side down to a preheated frying pan over a medium heat. Cook for 7 minutes until the skin is crisp, turn over and cook a further 7 minutes, or until fully cooked.

Step 3

Add snow peas and peas to a saucepan of boiling water and cook for 1 minute, drain and set aside.

Step 4

To serve, divide mash between serving plates, top with salmon and accompany with the peas, sprinkled with mint leaves. Serve with lemon wedges.

800g washed potatoes, peeled
50g butter, diced
⅓ cup milk
2 tsp finely chopped chives
Salt flakes & freshly ground black pepper
2 x 300g Tassal Tassie Fresh Salmon Fillets, skin on
2 tsp olive oil
150g snow peas, trimmed
½ cup frozen peas
Mint leaves and lemon wedges, for serving
