Salmon Frittata

METHOD

Step 1

Preheat the oven to 180ºC. Whisk together the eggs, Greek yoghurt and season with salt and pepper.

Step 2

Heat oil in a medium oven proof pan. Add the leek and spring onion to the outer edge of the pan, add the salmon portions in the middle.

Step 3

Cook for 3 mins on each side. Use a fork to flake the salmon apart, add in the parsley and fresh dill, stir it through.

Step 4

Pour over the egg mixture and then top with goats cheese. Bake in the oven for 20 mins or until eggs are just set in the middle.

Step 5

Serve with crusty sourdough bread.

Ingredients:

1x 260g Tassie Tassal Salmon, skin off

1 tbsp extra virgin olive oil

1 leek, sliced

2 spring onions, finely chopped

½ cup parsley, finely chopped

1 tbsp fresh dill, finely chopped

1 cup Greek yoghurt

8 eggs

50g goats cheese,

salt and pepper to taste

4 slices crusty sourdough, toasted
