Nourishing Salmon Pasta
METHOD
- Step 1

Heat a large pot of salted water. Cook pasta until al dente, adding peas for the last minute. Reserve 1/4 cup of pasta water. Drain and set aside.

In a fry pan, drizzle a little oil and cook salmon for 3-4 minutes on both sides, until cooked through, and set aside. Use a fork to flake.

In a large pan, heat some oil and sauté leek and garlic. Add zucchini and cook for 1 minute. Reduce heat to low and add cooked pasta, peas, and salmon to the pan. Add lemon juice and mix together. If needed, add pasta water in small increments

Turn heat off, and stir through lemon zest.

Transfer to 2 bowls and top with fresh ricotta and dill. Season with salt and pepper.

Tassal Fresh Tassie Salmon Skin Off 300g
150g fettuccine
1 cup frozen green peas
1 large zucchini, ribboned
1/2 leek, white part only, finely sliced
2 garlic cloves, minced
Juice of 1 lemon
Zest of 1 lemon
1/4 cup fresh ricotta
Fresh dill, to serve
Extra virgin olive oil
