Glazed Salmon with Soba Noodles
METHOD
- Step 1

Combine marinade ingredients in a large dish or bowl. Add salmon and toss well. Set aside for 10 minutes.

Meanwhile, add noodles to a large saucepan of boiling water and cook to pack directions, or until tender. Add edamame in the last minute of cooking. Drain and rinse well under cold water. Combine with the cucumber and spring onion.

Drizzle a little oil into a preheated frying pan over medium heat. Remove salmon from marinade with a slotted spoon and cook, turning occasionally for 6-8 minutes or until cooked to your liking. Set salmon aside and wipe out the pan. Add remaining marinade to pan and gently heat through.

Divide noodles between serving bowls and top with salmon, drizzle with some of the heated marinade and finish with the sesame seeds and chilli.

Marinade:
⅓ cup soy sauce
2 tbsp rice wine vinegar
2 tbsp mirin
3 tsp maple syrup
1 tsp sesame oil
300g TASSAL Diced Salmon
300g soba noodles
⅓ cup shelled edamame beans
1 lebanese cucumber, finely sliced into rounds
2 spring onion, finely sliced
1 tbsp toasted sesame seeds
Sliced chilli, optional
Sunflower oil
