Garlic and Herb Infused Salmon with Veggies

METHOD

Step 1

Preheat oven to 200°C fan forced.

Step 2

Remove salmon from tray and discard soaker pad.

Step 3

Place tomatoes in base of tray and place salmon on top. Season with salt and pepper.

Step 4

Bake in oven for 15-20 minutes until the salmon is cooked through and tomatoes have softened.

Step 5

Serve with steamed potatoes and beans and garnish with fresh thyme.

Ingredients:

300g Tassal salmon Garlic and Herb Infusions

1 Tbsp extra virgin olive oil

125g mini tomatoes*

Sea salt and freshly ground black pepper, to season

Steamed potatoes and beans, to serve

Fresh thyme to garnish
