Creamy Garlic Salmon on Rice

METHOD

Step 1

Heat oil in a fry pan at a med-high heat then cook salmon for 3 mins each side. Remove from pan and set aside.

Step 2

Melt the butter in fry pan, then add in the onion and cook until it begins to soften. Add the garlic and semi-dried tomatoes and cook for 1 min. Add the white wine to de-glaze and reduce heat.

Step 3

Whisk in the thickened cream and bring to the boil. Reduce heat and simmer for 5 mins or until thickened. Stir through the spinach and parmesan. Add the salmon back to the pan and spoon cream cheese on top.

Step 4

Steam the broccolini for 3 minutes. Cook rice as per packet instructions.

Step 5

Serve on brown rice with a side of steamed broccolini.

Ingredients:

1 x 260g Tassal Salmon Fillets, Skin off

1 tbsp butter

1 tbsp Olive Oil

3 cloves garlic, crushed

½ brown onion, diced

100g semi dried tomatoes, thinly sliced

1/3 cup dry white wine (optional)

250mL thickened cream

2 cups baby spinach leaves

1/3 cup parmesan cheese, grated

1 bunch broccolini

250g brown rice, cooked
