Almond crusted salmon with cranberry sauce
METHOD

Preheat the oven to 180°C and line a baking tray with baking paper.

In small bowl combine the panko breadcrumbs, almonds, parsley, lemon and orange zest. Place the salmon fillets close together on the baking tray and then generously top with the crumb mixture. Drizzle butter over the salmon. Bake in the oven for 15min.

Meanwhile prepare the cranberry sauce. Place the jar of cranberry jam in a small saucepan with the water, orange juice and a pinch of salt. Bring to the boil stirring until it is well combined. Reduce heat and allow to simmer for 5mins.

Serve salmon fillets drizzled with cranberry sauce along with a side of pan fried broccolini and crispy potatoes.
Ingredients:
2 x 300g Tassal Tasmanian Fresh Salmon skin on
1 cup Panko bread crumbs
1/3 cup Roughly chopped almonds
¼ cup Parsley, roughly chopped
2 tsp Lemon zest
2 tsp Orange zest
3 tbsp Butter, melted
Sauce
150g Jar Cranberry Jam or Sauce
½ cup Water
3 tbsp Orange juice
Pinch Salt
