Teriyaki Salmon Tray Bake with Soba Noodles

METHOD

Step 1

Preheat oven to 220C/200C fan forced. Grease a 25 x 37.5cm (3cm deep) baking tray. Place salmon in tray. Combine marinade and 2 tbs water in a small bowl. Pour over salmon and turn to coat.

Step 2

Bake for 12 minutes, basting salmon with marinade from the tray halfway through cooking, or until salmon is just cooked through.

Step 3

Meanwhile, cook noodles in a saucepan of boiling water according to packet instructions, adding sugar snap peas and edamame in the last 2 minutes of cooking. Drain well.

Step 4

Move salmon to top of tray. Add noodle mixture, cabbage, radish, lemon juice and oil to tray, then toss gently to coat in marinade mixture. Divide noodle mixture and salmon among plates. Top with coriander and serve.

Ingredients:

2 x 300g Tassal Fresh Tassie Salmon Skin off
⅔ cup teriyaki marinade
180g dried soba noodles
150g sugar snap peas, trimmed
½ cup frozen shelled edamame
¼ small red cabbage, shredded
½ bunch red radishes, quartered
½ lemon, juiced
2 tsp sesame oil
coriander sprigs, to serve
