Tassal Salmon Burger
- Step 1
Combine the vinegar and sugar, mixing until sugar is dissolved. Add carrot, mix well and set aside until required.
- Step 2
Preheat a frying pan over medium heat. Add burger buns, cut face down. Cook for 2-3 minutes or until golden. Remove and set aside.
- Step 3
Drizzle the oil into the frying pan and cook salmon burgers for 10 minutes, turning occasionally, or until fully cooked.
- Step 4
Top burger bun bases with lettuce and cucumber ribbons, followed by salmon burgers. Top with the pickled carrot, spring onion and coriander. Smear burger bun lid with mayonnaise and place on the burger. Serve immediately.

1 tbsp rice wine vinegar
2 tsp caster sugar
½ carrot, shredded or julienned
2 burger buns, halved
2 tsp lightly flavoured oil
½ Lebanese cucumber, sliced into ribbons
1 spring onion, thinly sliced
Coriander and Sriracha mayonnaise, for serving
