Tassal Australian Tiger Prawn sandwiches

Step 1

To make chilli oil: Place your oil in a pot and bring to sizzling temperature (5 minutes on medium heat). Once your oil is hot, carefully add both kinds of chilli, ginger, garlic, lemon zest and let cook for 15 minutes until crunchy. Take off the heat, and add lemon juice and oregano, let sit to chill, and place in a jar until needed.

Step 2

To make Tiger Prawn sandwiches In a mixing bowl add the garlic aioli, chilli oil and prawns. Season with salt and pepper, and mix until combined.

Step 3

To assemble your prawns sandwiches, add 1-2 tbsp of prawn mix on a slice of bread, top with shredded iceberg lettuce and a handful of salt and vinegar chips.

Step 4

Serve immediately with a handful of napkins to catch the crumbs :).

4 sliced soft brown or white bread
1 tbsp garlic aioli
1 tbsp chilli oil (see recipe below)
1 pack salt & vinegar chips
1 cup iceberg lettuce, shredded


Chilli Oil

10 long red chilli
1 tsp dried chilli
1 tsp ginger, minced
2 cloves garlic, minced
½ tsp lemon pepper
Zest and juice of one lemon
¼ cup fresh oregano, chopped
2 cups olive oil
1 tsp salt flakes
