Sweet Potato Rosti with Smoked Salmon

Step 1

In a large bowl, combine sweet potato, onion, carrot, zucchini, cheese, egg and wholemeal flour.

Step 2

Heat a large frying pan with a drizzle of olive oil, using a large spoon, create 3 rostis by scooping the mixture onto the pan and use the back of the spoon to flatten each rosti. Flip after 3-4 minutes or until browned, cook remaining side for another 3-4 minutes. Transfer to a rack and repeat with remaining mixture.

Step 3

Top each rosti with a spoonful of Greek yoghurt, Tassal Smoked Tassie Salmon, fresh dill and a squeeze of fresh lemon.


100g Tassal Smoked Tassie Salmon

1/2 cup Greek yoghurt

100g sweet potato, grated

1/4 Spanish onion, finely diced

1/2 large carrot, grated

1/2 large zucchini, grated and excess moisture squeezed out

1/4 cup reduced fat tasty cheese

1 egg

1/4 cup wholemeal flower

Extra virgin olive oil

Fresh dill, to serve

Fresh lemon, to serve
