Smoked Salmon and Ricotta Board
METHOD

Use a fork to combine ricotta and feta add lemon rind and mix until roughly combined. Season with black pepper.

Spread ricotta mixture onto a board or plate. Garnish ricotta mixture with smoked salmon, cucumber, capers, and coriander. Drizzle with olive oil and top with extra lemon rind.

Enjoy easy entertaining when served with breadstick or biscuits!
Ingredients:
150g Tassal Smoked Tassie Salmon
375g ricotta
150g feta or Persian feta
Finely grated rind of 1/2 lemon
Coarsely ground black pepper
1 cucumber, finely diced
1 tablespoon capers, chopped
1/4 cup coriander leaves, torn
Olive oil, for drizzling
Thinly sliced breadstick, for serving
Finely grated rind of 1/2 lemon, optional
