Smoked Salmon Summer Salad

METHOD

Step 1

Combine salad dressing ingredients in a jar and place lid on tightly, shake until combined. In a large bowl add the kale and spinach and toss with salad dressing.

Step 2

Arrange kale and spinach on 4 plates, and top each plate with equal amounts of smoked salmon, avocado, red onion, pear and peacans.

Step 3

Top with cracked black pepper and a wedge of fresh lemon.

Ingredients:

250g Tassal Tasmanian Smoked Salmon

6 cups kale leaf & spinach mix

1 avocado, sliced

1/2 red onion, finely sliced

1 pear, sliced

1/2 cup candied pecans

Black pepper

Lemon wedges, to serve

 

Salad Dressing:

1/4 cup extra virgin olive oil

1 tbsp lemon juice

2 tsp honey

1 tsp dijon mustard

1 tsp wholegrain mustard
