Smoked Salmon Soba Noodle Salad
METHOD
- Step 1

Cook noodles in a large saucepan of boiling salted water for 4-6 minutes or until tender. Drain, refresh under cold water and drain again. Transfer to a large bowl for later.

Finely slice red onion and place in a small bowl with vinegar and water, then set aside. Next, shave cucumber lengthways into ribbons.

For the dressing, place all ingredients in a small bowl and whisk to combine.

Transfer noodles to a serving platter and arrange cucumber, pickled onion and edamame beans on top. Pour the dressing over the and gently toss. Top with dill, mint, coriander and red chilli.
Ingredients:
100g Tassal smoked salmon
100g dried soba noodles
1/2 red onion
3 tbsp white vinegar
2 tbsp warm water
1 cucumber
75g edamame
2 tbsp dill
10g fresh mint
10g fresh coriander
1 red chilli, thinly sliced
Dressing
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon honey
1 tsp Dijon mustard
Pinch of salt and pepper
