Smoked Salmon Brunch Platter

METHOD

Step 1

Combine red onion, vinegar, sugar, and salt. Allow to marinate for 1 hour to soften. Add capers. Spoon dip into serving bowl.

Step 2

Arrange platter with cos lettuce, halved eggs, pomegranate, pickled red onions, avocado, In separate bowl serve chopped tomatoes and tabouli. Arrange premium smoked salmon on platter and with sprinkle of black pepper.

Step 3

Let the guests top their bagels with their favourite combines.

Ingredients:

180g pack Tassal Premium Selection Salmon

Pickled red onion

1 red onion, thinly sliced into rounds

1/4 cup white wine vinegar or lime juice

1 tsp caster sugar

Large pinch of salt

2 teaspoons capers

200g tub tzatziki dip

5 bagels

3 hard boiled eggs

1 pomegranate, broken in half

1 avocado, cut into 1/4

2 baby cos lettuce, washed

Lemon wedges

Colour tomatoes, roughly chopped

Prepared tabouli salad, to serve
