Smoked Salmon Baked Eggs

METHOD

Step 1

Preheat oven to 200°C.

Step 2

In a saucepan melt the butter and add the chopped onion, fry for 5 mins until soft and translucent

Step 3

turn off the heat and add the horseradish, cream, smoked salmon, chopped parsley and lemon juice then season to taste.

Step 4

Divide the mixture between 2 small oven proof dishes and make a well in the center of the mix

Step 5

Crack 1 egg into each and sprinkle with vegan Parmesan

Step 6

Cover loosely with foil or the lid of your baking dish and bake in the oven for 15 mins.

Step 7

Remove the foil and cook for a further 5-8 mins until the egg white has set then serve straight away!

Ingredients:

1/2 cup shredded Tassal Smoked Salmon
1 tbsp vegan butter
1/2 cup finely diced brown onion
1/3 cup dairy free thickened cream
1 tbsp cream horseradish
1 tbsp fresh lemon juice
1/2 tbsp fresh chopped parsley
2 eggs
2 tbsp vegan Parmesan
