Smoked Salmon, Avo, Egg & Lemon Hollandaise on Sourdough
METHOD

Place hollandaise sauce in a microwave proof bowl, add the lemon juice and mix well. Heat in a microwave oven on high for 20 seconds, stir then return to microwave for a further 20 seconds until hot.

To serve; stack 3 slices of toast on top of each other and top with smashed avocado. Arrange the egg on top of the avocado and finish with 2 slices of TASSAL Smoked Salmon. Finish with a spoonful of hollandaise and serve with a cheek of lemon and a sprig of dill. Serve immediately.
Ingredients:
250g Tassal Smoked Tassie Salmon slices
200g jar Hollandaise
1 tbsp lemon juice
12 x slices wholegrain sourdough bread, toasted
1 avocado, peeled, stone removed & lightly crushed with a fork
4 eggs, soft boiled
To serve:
4 lemon cheeks
4 sprigs dill
