Smoked Salmon, Asparagus and Lemon Pasta
- Step 1
Cook the pasta as per the packet instructions. Drain the pasta, reserving 1 cup pasta water.
- Step 2
Heat a large fry-pan with olive oil on medium heat. Add garlic and fry for 1-2 mins until golden and fragrant. Add in the asparagus cooking for another 1 min, mix through the lemon, smoked salmon, pasta and lemon juice. Finally, mix through the bread crumbs and season with salt and pepper.
- Step 3
Serve immediately and top with grated parmesan cheese and dill and enjoy! *if you don’t have course bread crumbs, you can roughly chop 2 pieces of sourdough, and place them in the oven for 5 mins to crisp up.

250g Tassal Smoked Tassie Salmon, thinly sliced
500g Angel hair pasta
2 Tbsp Extra Virgin Olive oil
3 cloves Garlic, crushed
Juice of 1 Lemon
100g Asparagus, cut into 1inch pieces
¼ course Bread crumbs*
1 tsp Cracked Pepper
50g Sharp Parmesan cheese
1 Tbsp dill, finely chopped
