Smoked Salmon and Lemon Gnocchi
- Step 1
Cook the gnocchi in a large saucepan of boiling water for 5 mins or until the gnocchi rise to the surface. Add the peas and cook for a further 1 min or until bright green and crisp. Drain well. Optional step is to pan fry the gnocchi with a bit of oil until golden brown. Set aside.
- Step 2
With a pan over medium-high heat add the cream and lemon juice. Bring to the boil. Cook for 2 mins or until mixture thickens slightly. Remove from heat. Add the gnocchi, peas and salmon and gently toss to combine. Season.
- Step 3
Sprinkle with lemon zest and serve immediately.
200g Tassal smoked salmon
500g potato gnocchi
300g sugar snap peas
3/4 cup (185ml) thickened cream
1 lemon, zested and juiced
