Salmon with Roast Vegetables

Step 1

Preheat oven to 200°C fan forced. Place vegetables onto a baking paper lined oven tray. Drizzle vegetables with a little olive oil. Season with salt and pepper. Roast veggies 30 minutes or until tender. Toss through rocket and arrange on a serving platter.

Step 2

Meanwhile, combine seeded mustard and olive oil. Brush both sides of salmon with mustard mixture. Pan fry salmon in a non-stick pan for 7 minutes each side or until cooked to liking.

Step 3

Serve salmon on top of roasted veggies.


2 x 300g packs Tassal Fresh Tassie Salmon (4 portions), skin off
4 small parsnips
3 medium sized beetroot, cut in quarters
1 bunch of baby carrots, washed
handful of baby rocket
olive oil, for drizzling
1 tablespoon seeded mustard
1 tablespoon olive oil
