Easy Lunch recipe: Salmon rice paper rolls with slaw

METHOD
- Step 1

Preheat oven to 200°C. Bake salmon in oven for 12-15 minutes or until cooked through.

Dip rice paper in almost boiling water for 5-10 seconds.
- Step 3

Place soaked rice paper onto plate and lay flat. The rice paper should soften in a few minutes.

Place noodles, salmon, cucumber, avocado and chilli in middle of rice paper.
- Step 5

Drizzle lightly with sweet chilli sauce.
- Step 6

Roll rice paper by folding in both sides, then fold the bottom over and roll until the end.

- 1 Tassal Salmon fillet – Tassal Frozen Salmon Portions 500g
- 6 Rice paper sheets
- 100g Vermicelli noodles, cooked
- ½ Cucumber, cut into sticks
- ½ Avocado, sliced
- Fresh chilli, sliced
- Sweet chilli sauce
