Salmon Pesto Pasta Bake
METHOD
- Step 1

Preheat the oven to 180ºC. Cook pasta as per packet instructions, reserving ½ cup pasta cooking water before draining.

While pasta is cooking, heat the oil in a large fry pan. Reduce to a medium heat and add the salmon fillets. Cook for 3 mins on either side. Remove from the pan and set aside.

Add the onion to the pan and sauté until it begins to turn opaque. Add the cherry tomatoes and spinach to the pan until the spinach is wilted. Remove from the heat.

Stir though cooked pasta and pesto. Flake the salmon and toss through the pan with ½ cup reserved pasta water.

Transfer to a baking dish and top with mozzarella. Bake in the oven for 10 mins until cheese is melted and golden. Remove from oven and top with fresh basil to serve.

2 x 300g Tassal Salmon Fillets, skin off
1 tbsp extra virgin olive oil
1 brown onion, diced
200g cherry tomatoes, halved
1 tbsp pesto
3 cups spinach
125g mozzarella
350g penne pasta
Fresh basil to serve
