Easy Lunch recipe: Salmon Jar Salad

- Step 1

Preheat oven to 200°C. Bake salmon in oven for 12-15 minutes or until cooked through.

Pour lemon juice and olive oil in the base of the jar (this will prevent the veggies from going soggy).
- Step 3

Lay cabbage, cucumber, capsicum, spring onion and coriander into the jar.
- Step 4

Add vermicelli noodles, then finish with salmon on the top of the jar.

When you are ready to eat, shake jar to mix dressing with ingredients and serve into a bowl or eat straight from jar.

- Tassal Fresh Tassie Salmon Skin Off 300g – 1 fillet, cooked and flaked
- 1–2 tbsp lemon juice
- Olive oil
- Red cabbage, finely shredded
- Cucumber, sliced
- Capsicum, diced
- Spring onion, sliced
- Coriander
- Vermicelli noodles, soaked and drained
