Easy Lunch recipe: Salmon Jar Salad

METHOD

Step 1

Preheat oven to 200°C. Bake salmon in oven for 12-15 minutes or until cooked through.

Step 2

Pour lemon juice and olive oil in the base of the jar (this will prevent the veggies from going soggy).

Step 3

Lay cabbage, cucumber, capsicum, spring onion and coriander into the jar.

Step 4

Add vermicelli noodles, then finish with salmon on the top of the jar.

Step 5

When you are ready to eat, shake jar to mix dressing with ingredients and serve into a bowl or eat straight from jar.

  • Tassal Fresh Tassie Salmon Skin Off 300g – 1 fillet, cooked and flaked
  • 1–2 tbsp lemon juice
  • Olive oil
  • Red cabbage, finely shredded
  • Cucumber, sliced
  • Capsicum, diced
  • Spring onion, sliced
  • Coriander
  • Vermicelli noodles, soaked and drained
