Salmon, garlic and white wine sauce linguini
METHOD
- Step 1

Bring a pot of water to the boil and season with salt
- Step 2

Chop the onion and garlic up. Heat a good splash of oil in a cooking pot and add the onion and garlic. Fry for a couple of minutes and the add the white wine. Reduce to half and add the cream and butter. Reduce to a third and set aside

In a frying pan heat a splash of oil. Add the diced fresh salmon and cook for 7 minutes stirring so it’s cooked evenly.

Add the smoked salmon and the peas and give it a good stir . Squeeze in the juice of 1 lemon and stir again. Add the white wine sauce. Stir a few times and add the pasta while stirring

Place the pasta in 4 bowls and garnish with the chilli, shaved Parmesan and a few small hands of the micro herbs
Ingredients:
1 x 300g pack of Tassal Tassie Salmon fillets, diced
150g pack of Tassal Tassie Smoked Salmon
300gr of linguini, cooked al dente
For the sauce
1 brown onion
1 bulb of garlic (cleaned)
300 ml of white cooking wine
80g of butter
300 ml of cream
Garnish
½ a red chilli
1 bunch of dill
2 cups of green peas, frozen
80g block of parmesan cheese
Juice of 1 lemon
Slice red chilli in rings
Chop dill
Defrost peas
With a peeler, shave Parmesan cheese
