Salmon Carbonara
METHOD

While the pasta is cooking, lightly sauté crushed garlic and shallots with a little oil.

Place eggs, thickened cream, and parmesan in a bowl. Season, then mix gently with a fork.

Drain pasta and then return to the same pan away from the stove top.
- Step 4

Add the smoked salmon, egg mixture, garlic, shallots and parsley to the hot pasta; toss to combine. The heat from the pasta will cook the egg slightly and form a creamy sauce.

Serve immediately, garnish with extra parmesan and enjoy!

- 250g Tassal Smoked Tassie Salmon – cut into strips
- 400g spaghetti, cooked as per packet instructions
- 1 Tsp olive oil
- 2 garlic cloves, crushed
- 3 eggs
- 100ml thickened cream
- 2 Tbsp flat-leaf parsley leaves, chopped roughly
- 2 shallots, finely sliced
- 2/3 cup freshly grated parmesan, plus extra to serve
- Salt and pepper
