Salmon & Broccolini Fettuccini
METHOD
- Step 1

Cook pasta according to packet instructions. Meanwhile, heat 2 tbsp of oil in a pan over medium heat, add salmon and cook for five minutes on either side. Once cooked, place the salmon on a plate and break into pieces.

In the same pan, heat remaining oil then cook broccolini and garlic over medium heat until slightly charred.

For sauce, mix cream, eggs and parmesan. Drain pasta then return to pan, add the sauce mix and stir through until well combined.

Serve pasta with salmon, broccolini and a squeeze of lemon. Top with parmesan and enjoy!
Ingredients:
1 x 260g Tassal Tasmanian Salmon Skin Off
1 bunch of broccolini, halved lengthways
4 tbsp Alfa One Rice Bran Oil
500g fettuccine pasta (or pasta of choice!)
2 cloves garlic, finely chopped
1 egg plus 1 egg yolk
¼ cup parmesan, plus extra to serve
½ cup cream
1 lemon to serve
