Easy Lunch recipe: Salmon bowl with rice & veggies

METHOD

Step 1

Preheat oven to 200°C.

Step 2

Place salmon and broccolini on a tray, drizzle with olive oil, season well.

Step 3

Bake for 12–15 minutes, until salmon flakes easily.

Step 4

Spoon rice into a bowl, top with flaked salmon and broccolini.

Step 5

Place edamame, spring onion, coriander, sesame seeds and chilli into bowl to finish.

  • Tassal Fresh Tassie Salmon Skin Off 300g – 1 fillet, cooked and flaked
  • 1 cup rice, cooked
  • 100g broccolini
  • 50g edamame, de-shelled
  • Spring onion, finely sliced
  • Coriander leaves
  • Sesame seeds
  • Fresh chilli, sliced
  • Olive oil, salt & pepper
