Prawn, Watermelon and Fetta Skewers with Mint Oil

METHOD

Step 1

Thread the cucumber, watermelon, prawns and fetta evenly onto skewers. Arrange on a serving platter.

Step 2

Blend mint, oil and lemon juice in a blender until smooth.

Step 3

Season skewers with salt and pepper and drizzle oil over the skewers and serve

INGREDIENTS:

1 continental cucumber, peeled into ribbons 

1/4 watermelon, cut into 2cm pieces 

475g pack of cooked Tassal Aussie Tiger Prawns, peeled with tails intact 

200g fetta, cut into 2cm pieces 

1/2 cup mint leaves 

1/3 cup extra virgin olive oil 

1 tbsp lemon juice
