Pistachio Crumb Salmon
METHOD

Preheat your oven to 180°C fan forced and line a tray with baking paper. Pat the salmon dry with paper towel and coat with olive oil, mustard and lemon. Sprinkle the chopped pistachios over the top and bake for 15 minutes or until cooked through.

Meanwhile, prepare the couscous salad by combing the cooked couscous, cucumber, tomato, fresh herbs and pistachios in a large bowl. Dress with olive oil and lemon juice and toss to combine.

Serve the pistachio crumbed salmon with couscous salad and enjoy.
Ingredients:
Pistachio crumbed salmon:
4 x Tassal Salmon Skin off 300g fillets
1 cup roasted pistachios, chopped
Juice of half a lemon
1 tablespoon extra virgin olive oil
2 tablespoons mustard
Sprinkle salt and pepper
Couscous salad:
1/2 cup couscous, cooked
2 small cucumbers, diced
1 cup cherry tomatoes, halved
1/2 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
1/4 cup roasted pistachios, chopped
dressing: 2 tablespoons extra virgin olive oil, juice of half a lemon
