Pesto Crumbed Salmon
METHOD
- Step 1

Preheat oven to 200°C. Evenly spread the zucchini, potatoes and lemon across a large baking dish. Place the salmon side in the middle and season with salt and pepper. Evenly spread the basil pesto over the salmon.

Make the crumb by mixing the panko breadcrumbs, lemon zest, dried parsley and parmesan in a small bowl.

Sprinkle over the salmon and bake for 35-40 minutes. Serve with a green salad and grilled asparagus.
Ingredients:
500g Tassal Salmon Fresh Tassie Salmon Side
2-3 tablespoons basil pesto
2 medium zucchinis, diced
3 medium potatoes, chopped
2 lemons, halved and sliced
1-2 tablespoons extra virgin olive oil
Sprinkle salt and pepper
Crumb:
3 tablespoons panko breadcrumbs
Zest of 1/2 lemon
1 tablespoon dried parsley
2 tablespoons parmesan cheese, grated
