Mini rosti with cream cheese and smoked salmon
METHOD

Combine the potato, onion, flour, salt and pepper together in a large bowl.

Pour oil half the oil into a large fry pan. Place a heaped tbsp of mixture into the pan to form a rosti. Repeat until the pan is full with 1cm between each rosti. Cook for 1-2min until golden brown and then flip and cook for another minute. Remove the rosti’s and place on paper towel to drain excess oil. Repeat until all potato mixture has been used, adding oil as needed to the pan.

Arrange the rosti’s on a large platter and then top with 1tsp of cream cheese and a small piece of salmon. Top with a piece of dill and serve with lemon wedges.

100g Tassal Smoked Salmon
4 large potatoes, grated
1 red onion, grated
4 Tbsp Flour
½ tsp salt
½ tsp pepper
¾ cup vegetable oil
100g Tassal Salmon Smoked salmon
100g Cream cheese
2 dill sprigs
1 lemon, cut into wedges
