Mini Mexican Tostadas with Guacamole & Lemon Smoked Salmon
METHOD

Prepare guacamole; combine guacamole ingredients together in a bowl and mash using a fork until mixture is smooth. Set aside

To assemble; place a teaspoonful of guacamole on each corn chip and top with ½ teaspoon crumbed goats cheese and a slice of tomato. Finish with a piece of TASSAL Lemon Smoked Salmon and a sprig of coriander. Arrange mini tostadas on a serving platter and serve immediately.

Guacamole:
1 large avocado
1tbsp finely chopped red onion
1 tbsp chopped coriander
squeeze lemon juice
salt
30 x round corn chips
160g Meredith marinated goats cheese, drained
8 cherry tomatoes, sliced into 4
2 x 90g TASSAL Lemon Smoked Salmon, cut into 30 pieces
30 sprigs coriander
