Maple glazed salmon with pomegranate salsa

METHOD

Step 1

Preheat oven grill to high. Place salmon on a lined baking tray 

Step 2

Combine maple, garlic and Moroccan spcies in a bowl and brush over salmon

Step 3

Grill for 6-8 minutes until charred and just cooked

Step 4

Combine all coriander, onion, pomegranate seeds and olive oil in a bowl

Step 5

Serve Salmon topped with salsa

INGREDIENTS

2x 300g of Tassal Fresh Tassie Skin on Salmon 

2 tbs maple syrup 

2 garlic cloves, crushed 

1 1/2 tsp Moroccan spice mix 

2 tbs chopped pickled jalapeno, plus 2 tbs pickling liquid 

1/2 red onion, finely chopped 

1 Lebanese cucumber, finely chopped 

1/2 bunch coriander, leaves picked 

Seeds of 1 pomegranate 

1 tbs olive oil
