Lentil and Smoked Salmon lunchbox salad
METHOD
- Step 1

Combine vinegar and oil to create a dressing. Toss lentils, beetroot, carrot, cucumber, parsley and dressing.
- Step 2

Spoon into a lunchbox and top with one serve of smoked salmon. Enjoy with lemon.
Ingredients:
1 tablespoon apple cider vinegar
2 teaspoons olive oil
1 cup drained and rinsed canned lentils
1 cup grated beetroot and carrot
1/2 cucumber, thinly sliced
1 cup parsley leaves, finely chopped
2 x 50g Tassal Smoked Tassie Salmon (Twin pack)
1/2 lemon, to serve
