Leftover Seafood Dutch Baby by Guy Turland

METHOD

Step 1

Combine eggs, milk, butter, flour, cornstarch, salt, and pepper in a blender and blend until completely smooth.

Step 2

Preheat your oven to 180°C. Place a cast iron pan inside the hot oven for 10 minutes to heat up thoroughly.

Step 3

Carefully remove the hot pan from the oven. Add butter, then pour in the batter, and immediately place the pan back into the oven. Bake for 10–15 minutes.

Step 4

Once the Dutch Baby is puffed up and cooked, remove it from the oven.

Step 5

Top the Dutch Baby with your Tassal seafood and any other leftover seafood ingredients.

INGREDIENTS

Tassal Cooked Aussie Tiger Prawns (peeled and roughly chopped)

Leftover baked Tassal Fresh Tassie Salmon, flaked

3 large eggs (room temperature)

¾ cup whole milk (room temperature)

3 tbsp unsalted butter (melted, slightly cooled, divided)

½ cup all-purpose flour

2 tbsp cornstarch

½ tsp kosher salt

½ tsp freshly ground black pepper

1 lemon (for serving)

Fresh herbs (dill, parsley, or chives)

Optional festive extras:

Pomegranate seeds or microgreens for garnish

Dollop of crème fraîche or mascarpone

Sprinkle of smoked paprika or nutmeg
