Honey Orange Glazed Salmon

Step 1

In a small bowl combine zest and juice of one orange, honey, garlic, ginger, set aside.

Step 2

Preheat the oven to 180ÂșC. Pat dry the salmon fillets, and then lay them on a baking tray lined with baking paper or aluminium foil. Liberally season the salmon with salt and pepper.

Step 3

Pour mixture over the salmon and arrange orange slices around the tray. Bake in the oven for 10 mins, then grill for 2-3 mins to turn golden.

Step 4

Meanwhile prepare the rice as per packet instructions and steam the pak choy in the microwave or on the stove for 2 mins.

Step 5

Remove salmon from the oven and sprinkle with spring onions. Serve with pak choy and rice

2 oranges

3 Tbsp. honey

2 cloves garlic, grated

1-inch ginger, grated

2 bunches Pak Choy

250g White Rice, cooked

2 spring onions, thinly sliced
