Herbed Salmon with Cauliflower Rice Salad

METHOD

Step 1

Preheat oven to 200° C fan forced.

Step 2

Combine parsley, cumin, paprika, turmeric, half lemon juice and 2 tbsp olive oil in a bowl. Place salmon fillets on a lined baking tray and brush each fillet with parsley mixture. Bake for 12 minutes or until cooked through.

Step 3

To make the salad, combine cauliflower, cucumber, tomatoes, capsicum, lettuce, remaining half of lemon juice and 2 tbsp olive oil in a large bowl and mix until combined.

Step 4

Divide salad among 4 plates and top with a salmon fillet.

Ingredients:

2 x 300g Tassal Fresh Tassie Salmon Fillets

2 tbsp chopped parsley

1 tsp cumin

1 tsp smoked paprika

1 tsp turmeric

Juice of 1 lemon

4 tbsp extra virgin olive oil

1 cauliflower, pulsed until resembles rice, or can use rice of your choice

2 tomatoes, diced

2 cucumbers, diced

1 small red capsicum, diced

1 x 120g mixed lettuce, torn
