Heirloom Tomato & Salmon Bacon Pizza

METHOD

Step 1

Combine the tomatoes, red onion, vinegar and oil in a bowl and mix well. Season to taste with freshly ground black pepper and salt.

Step 2

Place the pizza bases on a paper lined oven tray and divide the tomato mixture between the 2 pizza bases. Arrange slices of TASSAL Salmon Bacon on top of the tomatoes and finish by scattering the bambini bocconcini balls over the pizza.

Step 3

Bake in a preheated oven of 230C for 8-10 minutes or until the cheese is melted and golden, and the base is crisp. Remove from oven and sprinkle with fresh basil leaves and parmesan shavings. Serve immediately.

Ingredients:

320g punnet mixed coloured cherry tomatoes, cut into quarters lengthwise

½ small red onion, finely diced

2 tsp red wine vinegar

2 tsp olive oil

 

300g packet TOSCANO Two Classic Pizza Bases

 

140g TASSAL Salmon Bacon, cut in half

220g tub Bambini Bocconcini, drained

 

To serve:

sprigs basil leaves

shaved parmesan cheese (optional)
