Garlic Salmon & Tomato Tray Bake

Step 1

Preheat the oven to 180ºC. Arrange the salmon, cherry tomatoes, garlic and asparagus over a large baking tray. Drizzle with oil and season with salt and pepper, cook for 10 mins. Remove and add crumbed feta, return to the oven for 5 mins or until salmon is cooked

Step 2

Meanwhile, prepare the couscous as per packet instructions, then cover and set aside ready for serving.

Step 3

Spoon couscous onto each plate and top with salmon, tomatoes, asparagus and serve


1 x 300g Tassie  Tassal salmon, skin off

200g cherry tomatoes

3 cloves garlic, thinly sliced

2 tbsp extra virgin olive oil

1 bunch asparagus

50g feta

Salt and pepper

1/2 cup couscous
