Fresh Prawns with Avocado & Feta Dipping Sauce
- Step 1
For the sauce, place avocado, sour cream, feta, lemon and herbs in the small bowl of a food processor. Pulse until smooth. Season to taste and refrigerate until required.
- Step 2
Arrange prawns on a serving platter with the dipping sauce, radish and lemon.
½ ripe avocado
¼ cup sour cream
20g feta, crumbled
2 tsp lemon juice
1 tbsp basil leaves
1 tsp chopped chives
Sea salt & freshly ground black pepper
20 TASSAL Cooked Tiger Prawns, tails on
Radish, lemon wedges and micro herbs, for serving
If you need to increase serving sizes, simply double the sauce and prawn amounts. Sauce is best eaten on the day.
Chives can be substituted for spring onions.
