Freekeh Salad with Cooked Tassie Salmon
METHOD
- Step 1

Bring a medium sized saucepan of water to the boil over a high heat. Add the freekah and reduce to simmer. Cook for 20 minutes or until tender. Drain and cool.

Combine freekah, parsley, pistachios, almonds and pine nuts, capers and currants. In a small jar, combine apple cider vinegar, olive oil, salt, pepper, and maple syrup and shake well.

Serve freekah salad on a platter, drizzle with dressing and top with Tassal Cooked Tassie Salmon.
Ingredients:
2 packs x 150g Tassal Cooked Tassie Salmon, flaked
1 1/2 cups (260g) freekeh, rinsed well
2 cups parsley leaves, roughly chopped
2 tablespoons pistachio nuts, chopped
2 tablespoons toasted slivered almonds
2 tablespoons toasted pine nuts
2 tablespoons baby capers, chopped
½ cup currants
For the Dressing
2 tablespoons apple cider
1 tablespoon extra-virgin olive
Sea salt and pepper to taste
1/4 teaspoon maple syrup
