Festive Baked Salmon Side
METHOD

Preheat oven to 180°C/160°C fan-forced.

Line a baking dish with baking paper and lay Tassal Fresh Salmon side skin down. Drizzle with 1/2 tbsp oil. Cook for 15-20 minutes or until cooked to your liking. Let rest for 10 minutes.

While salmon rests, make the topping by combining parsley, cranberries, almonds, pomegranate seeds, remaining oil and orange juice. Mix well.

To serve, spread tzatziki evenly over Tassal Tassie Salmon side, then top with parsley mixture and zest of 1 lemon.
Ingredients:
500g Tassal Fresh Tassie Salmon Side
1/2 tbsp extra virgin olive oil
1/2 cup tzatziki
1/2 cup parsley, chopped
1/2 cup reduced sugar dried cranberries
1/2 cup silvered almonds
3 tbsp pomegranate seeds
1 1/2 tbsp fresh orange juice
Zest of lemon
