Egg and Salmon Breakfast Muffins

METHOD

Step 1

Preheat oven to 180*C fan-forced.

Step 2

Cut crusts off bread and use a rolling pin to flatten. Cut diagonally in half and place cut sides in the centre of each muffin hole, making sure that the base is completely covered. Place in the oven for 5 minutes, or until slightly toasted and remove.

Step 3

Sprinkle feta into bread cups, top with Tassal Cooked Smoked Tassie Salmon and a whole egg cracked on top. Repeat for all. Bake for 15 minutes or until egg is cooked for desired consistency. If making ahead of time, cook until egg is fully set as will keep better.

Step 4

Top each with remaining Tassal Cooked Smoked Tassie Salmon and fresh chives.

Tassal Cooked Tassie Salmon 150g, flaked

6 slices wholemeal bread

6tso crumbled feta

6 eggs

Fresh chives
