Cooked Salmon with Couscous salad

METHOD
- Step 1

Prepare the couscous as per the packet instructions. Transfer to a large salad bowl and use a fork to fluff it up. Allow to cool for a few minutes. Toss the couscous with the cucumber, onion, parsley, and mint. Season with salt and pepper.

In a bowl whisk together the oil, lemon juice, mustard, maple syrup, garlic, and feta. Season with pepper.

Drizzle the dressing over the salad and then top with Tassal Cooked Salmon.
Ingredients:
1 x Tassal Cooked Tassie Salmon 150g
1 cup wholemeal couscous
1 Lebanese cucumber sliced thinly and quartered.
¼ red onion, finely chopped
½ cup fresh parsley, roughly chopped
½ cup fresh mint leaves, finely chopped
Dressing:
1/3 cup extra virgin olive oil
2 Tbsp lemon juice
2 tsp Dijon mustard
2 tsp maple syrup
1 garlic clove, minced
75g Greek feta, crumbled
