Chilli Prawn Scrambled Eggs by Guy Turland

In a bowl, whisk together the eggs, cream, parmesan, salt, and pepper until thoroughly combined.

Melt the butter in a pan over medium heat. Pour in the egg mixture and cook on a low heat until the eggs are creamy and set. Fold in the cleaned Tassal Cooked Aussie Tiger Prawns.

Place the chilli prawn eggs on a slice of toasted sourdough. Finish with a drizzle of chilli crunch and serve alongside avocado and a wedge of lemon.
INGREDIENTS
150–200g Tassal Fresh Aussie Tiger Prawns (Peeled, deveined & thinly sliced)
4 large eggs
2 tbsp milk or cream
1 tbsp butter
2 tbsp grated Parmesan cheese
2 slices sourdough or preferred bread
½ avocado – sliced
1–2 tsp chili crunch (adjust to taste)
Sea salt & freshly ground black pepper
Fresh parsley or chives, chopped (optional garnish)
