Mediterranean Salmon Salad

METHOD

Step 1

In a small bowl mix together oregano, garlic, olive oil and lemon juice. Cover salmon fillets in mariange and season with salt and pepper.

Step 2

In a large pan heat olive oil. When pan is hot add salmon, skin side down and cook for 5 minutes. Gently flip Salmon and cook for 2-3 minutes.

Step 3

Add cherry tomatoes, olives, cucumber, parsley, basil, feta cheese and olive oil to a bowl and mix together. Season with Salt and pepper.

Step 4

Serve salad on a large serving plate with salmon on top or broken up into the salad.
