Sweet Potato & Carrot Fritters with Smoked Salmon

Step 1

Combine sweet potato, carrot, almond meal, egg, cumin, parsley, salt and pepper together and mix well.

Step 2

Heat oil in a non-stick pan on medium heat and drop tablespoonfuls of mixture into pan to cook. Cook for approximately 3 minutes each side, or until golden.

Step 3

When fritters are cooked, add kale to pan to warm and wilt slightly. Top fritters with kale and smoked salmon or salmon bacon.* *Cook Salmon Bacon according to packet instructions.


70g Tassal Smoked Salmon or Tassal Salmon Bacon

150g Small Sweet Potato, grated

1 carrot, grated

3 Tbsp. Flour or almond meal

1 egg

1 tsp Parsley

1 Tbsp Olive oil

1 cup Kale
