Smoked Salmon Salad
METHOD
- Step 1

Mash feta and combine with the yoghurt to create the smudge. Set aside in fridge. (Short cut - substitute with a tub - prepared tzatziki or hummus dip)

Combine dressing ingredients in a jar and shake well.
- Step 3

Toss the salad ingredients together.
- Step 4

Take 4 plates, spread a smudge of feta yoghurt on each plate, top with salad, arrange smoked salmon to one side of the plates.

Drizzle salad with dressing and sprinkle dill. Enjoy with crusty baguette.
Ingredients:
1/4 cup Persian feta
1 cup natural yoghurt
Dressing
1 1/2 teaspoons honey
3 tablespoons olive oil
3 tablespoons cider vinegar
3/4 teaspoon Dijon mustard
Salad
100g mixed lettuce
1 baby cos lettuce, washed
4 radishes, very thinly sliced
1 ripe avocado, diced
1 cucumber, thinly sliced
1/2 baby fennel, shaved
180g pack Tassal Premium Selection Smoked Salmon
Fresh dill, for garnish
Sour dough baguette, to serve
